This single origin Ethiopian Guji comes from the Shakiso village in the Sidamo region of southern Ethiopia. This coffee is a washed coffee meaning that the cherry is first pulped to remove the outer layer, it is then put in fermentation tanks which breaks down the sticky mucilage layer that is exposed once the skin is removed and then finally washed to remove any remaining fruit. This process results in a cleaner and lighter cup than other processes.
